The Fall season is very well known for a wide range for yummy treats, smells and flavors. One of the things I like the most about Fall is caramel. It’s so smooth, rich, and perfectly comforting.
Today I decided I’d share with you my favorite recipe for OOOEY GOOEY Caramel Popcorn. This is so sticky, yet it won’t pull your teeth out. It’s so perfectly sweet, yet it won’t leave you feeling you’ve had a sugar rush. It’s so crunchy but smooth, you simply won’t be able to stay out of it.

OOOEY GOOEY Caramel Popcorn
2-3 quarts popped popcorn (2 bags of microwave popcorn)
1 cup butter
1 cup brown sugar
33 large marshmallows (yes 33….no more, no less!)
Start by melting your butter in a pan and add the sugar. Cook on medium high until the sugar is dissolved (about 4-5 minutes). Turn the heat down to a medium-low and add your marshmallows. Stir mixture until they are completely melted together. Pour marshmallow mixture over popcorn and stir gently until popcorn is coated well. Spread onto a cookie sheet lined with wax paper. Let cool. Once cooled, dig in!
It can also be made into popcorn balls. Just butter your hands and scoop desired amount of popcorn into a ball, pressing together tightly. Lay out on a piece of wax paper to set and cool. I can usually get about 15 softball-sized popcorn balls from one batch.
This is very quick and easy to make. Just be warned, it is very sticky and gooey and you may have a hard time staying away from it.
